Spinach Fatayer (فطاير سبانغ)
Spinach Fatayer (فطاير سبانغ) is a classic from the Lebanese Mezze (مازة لبنانية) variety of dishes. We show you how to realize them at home through this step by step recipe!
Equipment
- 1 Baking Tray
- 1 Bowl
- 1 Brush
- 1 Cutting Board
- 1 Rolling Pin
Ingredients
- 210 grams Mankoushe/Ftire Dough (Check our recipe here)
- A handful Fresh Spinach
- ½ Tomato
- ½ Onion Big
- ½ tsp Black Pepper
- 1 tsp Sumac
- 1 tsp Paprika
- 1 ½ tsp Salt
- 1 tbsp Vegetable Oil
- 2 tbsp Lemon Juice
- 1 tbsp Pine Nuts
Instructions
Spinach Mixture
- Slice the spinach into small chunks and place them in a bowlA handful Fresh Spinach
- Slice the tomato into small cubes and place them in the bowl½ Tomato, ½ Onion
- Slice the onion into small cubes
- On your cutting board in the following order, add black pepper, sumac, paprika, salt and mix everything well together½ tsp Black Pepper, 1 tsp Sumac, 1 tsp Paprika, 1 ½ tsp Salt
- Place the mixture in the bowl
- In the bowl add the vegetable oil, lemon juice and pine nuts, then mix well1 tbsp Vegetable Oil, 2 tbsp Lemon Juice, 1 tbsp Pine Nuts
Fatayer shaping and filling
- Gently flour your working surface and place on it your dough210 grams Mankoushe/Ftire Dough (Check our recipe here)
- Deflate it gently to release all the formed gases
- Divide your dough into 6 pieces of 35 grams each
- Roll it to form a ball and place it on your working surface
- Press the dough piece with the tip of your fingers to give it a disc shape
- Continue using a rolling pin to give it a good 12-14 cm of diameter
- Place 1 to 1 ½ tbsp of your spinach mixture in the center
- Close the extremities together to form a triangle (see our video for a visual representation)
Fatayer cooking
- Brush using vegetable oil, the surface of your baking tray
- Place each fatayer on your baking tray and gently brush it with vegetable oil
- Preheat your oven at 200 degrees Celsius (392 degrees Fahrenheit) with convection on
- Place the baking tray in the oven on the middle grid and bake until golden (this takes about 10 minutes depending on the power of your oven)
- Place the obtained fatayer on a cooling grid for about 10 mins and enjoy!

Our Cooking Hints
- You can replace spinach with chard or even zucchini for an amazing experience
- Some people tend to opt for a dough without yeast to avoid the pieces from rising too much. We believe however that the yeast version gives a better taste due to fermentation
- Do not hesitate to modify the quantity of lemon juice to your convenience
- You can place the remaining unused spinach mixture in the fridge and use it the next day
