Homemade Pizza
We present to you or homemade pizza from A to Z recipe. We guide you step by step in preparing your own dough, pizza sauce and adding the condiments for a Regina pizza.

Ingredients
Dough
- 350 grams Flour T55-T65
- 100 mL Milk Full Cream or Low Fat
- 100 mL Water
- 4 grams Instant Yeast
- 5 grams Salt
- 1 tbsp Olive Oil
Sauce
- 4 Tomatoes
- 1 tbsp Sugar
- ½ tsp Salt
- ½ tsp Pepper
- ½ tsp Garlic Powder
- ½ tsp Onion Powder
- 1 tsp Ground Thyme
- 1 tsp Herbs of Provence
Condiments (Toppings)
- 4 slices Ham
- 100 grams Shredded Mozarella
- 100 grams Shredded Emmental
- 100 grams Fresh Mushrooms
- 50 grams Black Olives
Instructions
Dough
- In your mixing bowl, add the milk and instant yeast and mix them well together
- Let it rest for about 10 mins
- Add your water, followed by flour and salt (in that exact order)
- Using a Danish whisk or an electric mixer with dough hook, let everything come together to form the dough (5 mins on the electric mixer on low speed, then 5 minutes on high speed)
- Once the dough is well formed, remove it from the mixer and knead it for about 10 mins on your working surface (do not add flour)
- Now that the dough has been well kneaded, place it back in the mixing bowl and cover it with a cling film
- Place it in a warm environment, ideally an oven that has a proofing option at 32 degrees Celsius for an hour and a half to two hours (until the dough rises well)
Sauce
- In the meantime, peel your tomatoes and place them in the blender
- Turn the blender on until you obtain tomato juice
- Pour the obtained juice in your small pot and place it on medium heat
- Using a wooden spoon, frequently stir while adding the spices in the following order: sugar, salt, pepper, garlic, onion, thyme and herbs
- Keep your tomato juice on low heat until it starts darkening and thickening
- Once you have obtained the desired texture (clearly looking like a pizza sauce), place it in the strainer to drain it from its water
- Place the obtained water free paste in the small bowl and allow it to cool
Toppings and cooking
- Preheat your oven at 200 degrees Celsius (392 degrees Fahrenheit) with convection on
- Now that your pizza dough has risen, gently flour your work surface and place it on it
- Using your hands, gently press it to release all the formed gases
- With your pastry roll, start rolling your dough to give it a circular shape, that is as close to the oven plate's dimensions as possible
- In your oven plate, gently pour a bit of cooking oil and using a tissue, spread the oil all over the plate, without forgetting the inner sides
- Place the dough in the oven plate and gently stretch it to the sides so that it covers all the surface
- Using a fork, pick your dough all over the surface so that pizza doesn't rise
- Pour your tomato paste and spread it all over the pizza
- Add your ham slices so they cover the whole surface as well
- If you chose to add sliced mushrooms, spread them all over the surface followed by the olives
- Finally, mix the cheese together in a separate bowl and start spreading them all over the surface
- Place your pizza in the oven for about 15-20 minutes, making sure that the bottom has changed color and is well cooked, and the cheese has completely melted
- Place it out of the oven, cut it in slices and serve!

Our Cooking Hints:
- You can use any topping you want, the principle is the very same
- If you choose to do a pepperoni pizza, do not use herbs of Provence or thyme in your pizza sauce and use 1 tsp of garlic power instead of ½
