Quinoa Salad
Quinoa Salad contains 11 proven health benefits. Combined with its high percentage of protein, it has found its place in many Vegan meals and meat substitutes. We present you with our recipe of a healthy and full meal quinoa salad.

Ingredients
- 1 cup Quinoa White or Red
- 2 cups Water
- 1 Vegetable Bouillon Cube
- 1 tsp Salt
- 2 tsp Sweet Pepper
- 1 tbsp Fresh Coriander
- 1 tbsp Fresh Mint
- 1 small Shallot
- 2 Tomatoes
- 2 small Cucumbers Or a big one
- 1 Avocado
- 1 tbsp Olive Oil
- 1 Lemon
Instructions
- Start by placing your quinoa in a pot with the water and bouillon cube and dissolve the bouillon while stirring at medium heat
- Once the bouillon is dissolved, reduce the heat to low, place a lid over the pot and let it cook for 8-10 mins (all the water should evaporate)
- Meanwhile, cut the shallot, cucumber, avocado and tomatoes in small pieces
- Then chop the fresh coriander and fresh mint
- Next, once the quinoa is cooked, let it cool for some time and add to it all the ingredients mentioned in steps 3 and 4, as well as the seasoning (olive oil, lemon juice, salt and pepper)
- Finally mix well and enjoy!
Notes
Our Cooking Hints:
- Quinoa salads taste better when served cold so make sure to leave your salad in the fridge for a couple of hours before serving it
- You can add shrimps to the salad but make sure to replace the vegetable bouillon cube with a fish bouillon cube
- You can use white quinoa, red quinoa or a combination of both for a more colorful salad!
