Start by placing your quinoa in a pot with the water and bouillon cube and dissolve the bouillon while stirring at medium heat
Once the bouillon is dissolved, reduce the heat to low, place a lid over the pot and let it cook for 8-10 mins (all the water should evaporate)
Meanwhile, cut the shallot, cucumber, avocado and tomatoes in small pieces
Then chop the fresh coriander and fresh mint
Next, once the quinoa is cooked, let it cool for some time and add to it all the ingredients mentioned in steps 3 and 4, as well as the seasoning (olive oil, lemon juice, salt and pepper)
Finally mix well and enjoy!
