Ingredients
  

  • 4 pieces Chicken Breast Cut in cubes
  • 2 tbsp Olive Oil Virgin
  • 1 small Shallot Sliced in pieces
  • 1 clove Garlic Crushed
  • 1 cup Pineapple Cut in cubes
  • 1 Banana Sliced in discs
  • 30 grams Salted Peanuts
  • 200 mL Coconut Milk
  • 1 tbsp Curry Powder
  • 1 tbsp Flour T45

Method
 

  1. In your pan on medium heat, pour 1 tbsp of olive oil followed by your chicken cubes, and cook them for about 10 mins
    2 tbsp Olive Oil, 4 pieces Chicken Breast
  2. Remove the chicken pieces and place them on a separate plate.
  3. Now place the peanuts in the pan and cook them about 2 mins, and place them in the same plate with the chicken
    30 grams Salted Peanuts
  4. In the same pan on medium heat, pour the pineapple cubes and cook them for a couple of minutes
    1 cup Pineapple
  5. Pour the banana discs and keep cooking for another couple of minutes until they caramelize

  6. In another separate plate, place the cooked pineapple and banana pieces
  7. Still in the same pan, pour the remaining 1 tbsp of olive oil followed by your shallot pieces and the crushed garlic and cook them for about 2 mins
    2 tbsp Olive Oil, 1 small Shallot, 1 clove Garlic
  8. Now add the flour and curry powder and cook for about 30 seconds
    1 tbsp Flour, 1 tbsp Curry Powder
  9. Finally, add the coco milk and keep stiring until it starts boiling
    200 mL Coconut Milk
  10. Once bubbles start forming, add the chicken and peanuts, as well as the pineapple and banana pieces and cook for another couple of minutes
  11. Your dish is now ready to be served!

Notes

Our Cooking Hints:

  • This dish is best served with white rice
  • Be careful with the curry powder you choose. There usually is a spiciness level indicated, and you can go with lighter versions
