Method
For the dough
- First add the egg, melted butter and yeast to the milk and whisk
- Let it rest for 10 minutes
- Second, mix the flour, sugar, salt and Nutmeg in a big bowl using a spatula and create a hole in the middle
- Pour the liquid mixture in the bowl and using a spatula, keep mixing until a dough starts to form
- Then put the dough on a work surface and knead it for about 10 minutes
- Replace the dough in the bowl, cover it and leave it for about an hour or so, until the dough rises and doubles in volume
Shaping and baking
- Afterwards, flour your work surface and put your dough on it
- Gently flour the dough and start rolling it until you get a 4 mm thickness
- Using a round mold or a bowl, cut your dough into round pieces
- For the hollow ones, do not forget to do a smaller round cut in the middle
- Then place your cut round shaped pieces of dough into parchment paper, cover them and let them rest for about 20 minutes
- In the meantime, heat some oil in a pot at 160 degrees Celsius (320 Fahrenheit) or by setting your deep fryer at the right temperature
- Put the precooked pieces in the oil and return them in the oil once the lower part starts to get golden
- For the hollow cut ones, you will know they are done baking once you see bubbles in the center
- As for the whole ones, you can gently tap on them using a slotted turner. If you hear a hollow sound it means they are done!
- Place the cooked goods on a cooling tray
Glazing
- Once cooled down, dip them completely in the glaze on both sides, and replace them on the tray (make sure to put a napkin underneath the tray)
- Once the sugar has crystallized, you can start devouring them!
Filling
- Using a knife, create a hole on the side up until the center
- Fill a piping bag with the ingredient that you want, and using a sharp pointy end, fill until it starts oozing out from the same hole
- Your donuts are ready to be savored!

Our Cooking Hints:
- You can add powdered sugar on top of the filled ones for an even better taste!
- These are best conserved in the fridge in a zip lock bag for up to 2-3 days
