Cut your chicken breast into large pieces (each half breast should give you 3 pieces) - For drumsticks, you can keep them as is
Place them in a large bowl and let them sit for 15 mins
Sprinkle them with salt and mix very well. Let them sit for 15 more minutes
In a first mixing bowl, place the 2 cups of flour
In a second mixing bowl, place in the following order, the eggs (Whisk well), the sparkling water and the flour
In the third mixing bowl, place the 3 cups of flour and all the spices and whisk very well (make sure to use a dry whisk)
Heat your cooking oil in a large and deep pot or in the fryer, at 180 degrees Celsius (356 degrees Fahrenheit)
Once the oil has reached its temperature, take a first piece, dip it in the first bowl, making sure it gets completely covered in flour
Dip it in the second bowl, then in the third bowl and make sure the flour and spices completely cover your piece of chicken breast
Place it in the oil and repeat the same process for 3-4 additional pieces
Do not put more than 5 pieces in your cooking oil to avoid a temperature drop
Let them cook for 20 minutes, until golden brown and cooked from the inside
Remove your cooked fried chicken and place them on an absorbing napkin sheet. Use a strainer to remove the small pieces from your cooking oil
Repeat for the remaining pieces
Enjoy some homemade, crunchy, tasty and delicious fried chicken!
