Lentils Taro Vegan Soup

Lentils are know to be a very beneficial source of proteins and fiber, with almost no fat. Taro contain a lot of benefits, such as its richness in fibers, Manganese, Vitamin B6, Vitamin E, Potassium, Copper, Vitamin C and Phosphorus. In this recipe we present you a delicious soup made of lentils and taro, an ideal starter which is completely vegan friendly.

Equipment

  • One big pot

Ingredients
  

  • 2 cups Red Lentils Washed
  • 500 grams Taro Sliced
  • 2 tbsp Vegetable Corn Oil
  • 1 big Onion
  • 1 tsp Salt
  • 2 Lemons Squeezed

Instructions
 

  • Cut the onion is small pieces
  • Afterwards, put the oil in a big pot on medium heat and pour in the previously cut onion
  • Then, once the onions start melting, add in the sliced taro and frequently stir for about 5 minutes
  • Now add the lentils, and frequently stir for about 2 mins
  • Then add 1.5 liters of water to the pot as well as the salt and wait for it to start boiling
  • Now once the water starts boiling, reduce the heat to minimal, cover the pot with a lid and leave it for 40 mins until the lentils and taro are well cooked
  • After 40 minutes, add the lemon juice, stir while still at minimal heat and wait for 5 minutes with the lid on
  • Turn off the heat and you’re done!

Notes

Our Cooking Hints:

  • Do not add the lemon juice before the lentils and taro are cooked, otherwise your dish will taste sourly
  • Since it’s a soup it will taste better hot
  • You can add croutons bread to it for an even tastier experience
