Mankoushe

This is a traditional breakfast in Lebanon and the levant region, which consists of a dough covered in thyme and olive oil, or cheese, or any ingredients you desire! Manakish (plural) can also be made at home and here is our special recipe!

Equipment

  • Baking Tray
  • 1 Spatula
  • 1 Kitchen Aid or equivalent
  • 1 Mixing Bowl
  • Baking Sheet

Ingredients
  

For the dough

  • 500 grams Flour T55 - T65
  • 100 grams White Plain Yogurt
  • 200 mL Warm Water
  • 11 grams Instant Yeast
  • 1 tbsp Sugar
  • 1 tsp Salt
  • 2 tbsp Olive Oil

For the topping

  • Olive Oil/Vegetable Oil
  • 4 tbsp Thyme Mix (thyme, sesame seeds and sumac)
  • 1 Tomato Optional
  • 1 Onion Optional

Instructions
 

  • Pour the yeast in the water, stir well and leave for about 10 mins
    11 grams Instant Yeast, 200 mL Warm Water
  • In a big bowl add the yogurt, flour, sugar and salt and mix well
    500 grams Flour, 100 grams White Plain Yogurt, 1 tbsp Sugar, 1 tsp Salt
  • Create a hole in the middle and once the 10 mins have passed, pour the water/yeast
  • Start mixing using a spatula or your hand, add the olive oil and keep at it until you obtain a dough
    2 tbsp Olive Oil
  • Once the dough has started forming, knead it for about 10 mins until it becomes homogeneous
  • Put it back in the bowl and cover for a couple of hours, until it doubles in size
  • Place your dough on your working surface and gently deflate it, before placing it in a plastic bag and in the fridge overnight
  • The next morning, place the dough on a lightly floured surface, and press it to remove the gases
  • Preheat your oven at 250 degrees Celsius (482 degrees Fahrenheit)
  • Divide it into 200-210 grams parts
  • Using a pastry roll, flatten each part while giving it a circular pizza like shape, and place it on a baking tray over a baking sheet
  • Alternatively, you can place the prebaked dough in a pan for a pan baked mankoushe
  • Slice the tomato and onion into small pieces and pour them in a separate bowl
    1 Tomato, 1 Onion
  • Add to it the thyme and keep adding olive oil while stirring until you get a liquid like mixture (you can do the same without tomatoes and onions)
    4 tbsp Thyme Mix (thyme, sesame seeds and sumac), Olive Oil/Vegetable Oil
  • Use this mixture over your shaped dough (approximately 2 tbsp per piece)
  • Place your baking tray in the oven for about 8 to 10 minutes with convection on, with the oven grill on the lowest
  • Alternatively, bake your mankoushe in the pan on medium to high heat while constantly checking underneath to check for a golden color (indicating it's baked)
  • Once baked, place the baked goods on a cooling grid for about 15 mins
  • Enjoy a delicious breakfast!

Notes

Our Cooking Hints:

  • You can replace thyme and oil with cheese, cheese and turkey, cheese and ham or even do a half-half combo
  • The best way to make sure it is cooked is to check its bottom for a golden/brown color
  • You can add vegetables such as tomato and cucumbers to your mankoushe for the EXTRA TASTE!
